Peppermint Cheesecake Brownies

I found this recipe courtesy of Cooking Light Magazine, they are a great holiday time dessert treat, mixing my favorite flavors of chocolate and peppermint together. While I have yet to have my first Peppermint Mocha of the season, we did put up our Christmas Tree yesterday.

Peppermint Cheesecake Brownies

Cheesecake batter:
1  (8-ounce) block 1/3-less-fat cream cheese
1/3  cup  granulated sugar
1/4  teaspoon  peppermint extract
1  large egg
1  large egg white
1  tablespoon  all-purpose flour
Brownie batter:
4.5  ounces  all-purpose flour (about 1 cup)
1/2  cup  unsweetened cocoa
1/2  teaspoon  salt
1 1/2  cups  packed brown sugar
1/4  cup  canola oil
1/4  cup  buttermilk
2  teaspoons  vanilla extract
2  large egg whites
1  large egg

1. Blend the cream cheese, sugar, peppermint extract, egg, egg white and flour together until smooth. Be careful the cream cheese likes to chunk up at the bottom, I always have to blend this a couple times.

2. Mix the Brownie batter ingredients all together. I like to add chocolate chips to the batter as well just to add a little extra treat (1/2 cup semi sweet chocolate chips)

3. Pour half the brownie batter into a greased pan (9×9 or 9×13)

4. Add the cream cheese mixture

5. Pour the rest of the brownie batter in and using a knife to cut through the batter, create the swirls.

6. Bake for 25-30 min at 350 degrees or until firm.

Tasty tasty! The chocolate chips make all the difference!
